Amaretto Ice Cream





The first 5 years my husband and I were married, we rarely went a night without dessert. Which was, of course, fine with me! That’s actually one of the reasons we fell in love; we both equally LOVE dessert! ๐Ÿ˜‰ But, surprisingly, neither of us are huge fans of ice cream. I’ve always been more of a brownie, cookie, or cake kinda person, and my husband loves pastries, crepes, and custards (he’s always been a bit of a princess ;)). Now, if ice cream is served alongside one of these desserts, even better!…ย But just ice cream alone?ย Booooring. But then, out of the blue, my husband got me an ice cream maker. So I decided (slash- was forced ;)) to give ice cream another chance.

If you are an ice cream newb like me, then you know that the hardest part about making ice cream is picking which flavor to make! But the ease of ice cream makers these days is just amazing! I have made a number of different flavors, including: vanilla, mint, pistachio, Oreo, etc. All of which are great. But when you are not someone that craves ice cream, you have to pair it with something you do crave… like Liquor! ๐Ÿ˜‰




I discovered Amaretto in college and quickly fell in love with Disarono with milk as my go to after dinner drink. It’s delicious, smooth, and it makes me feel classy, since my other go to drink is box wine ๐Ÿ˜‰ So it wasn’t that much of a stretch to make Amaretto ice cream. But take my word for it, it’s fantastic! It’s smooth and creamy and the combo of vanilla with almond flavoring is amazing.

Ingredients

3 c. heavy cream

1 c. 2 % milk

ยพ c. sugar

4 egg yolks

1 tsp. Almond extract

1 tsp. Vanilla extract

ยฝ c. Amaretto

ยฝ c. slivered almonds (optional)

 





Directions


  1. In a sauce pan, warm the cream, milk, and sugar until the sugar has dissolved.

  2. While the cream mixture is heating, separate the eggs and whisk the yolks together.

  3. Once the cream mixture is warm, but NOT boiling, pour one cup of this mixture into the egg yolk. Stir until combined. Then pour the egg and cream mixture back into the sauce pan and whisk until combined.ย Continue whisking and allow the mixture to heat for 8-10 minute (don’t let it boil).

  4. Remove from heat and strain the ice cream. Once strained, add in the vanilla and almond extracts and amaretto. Pour mixture into ice cream maker. Follow instructions for your machine in order to freeze the ice cream. Once frozen, sprinkle with slivered almonds (optional) and serve :)
  5. Try it with my Cherry Pie!
