This title is a little (LOT) redundant, but it’s necessary in order to describe the creaminess of this ice cream 😉 Plus, it actually is almost entirely cream (YUP, it doesn’t get more fattening than this!) BUT, if you are a coconut lover (like me), you will be in heaven! So just ignore the diet for this one.
Ok, well there’s not a whole lot to say about this recipe. It’s definitely error proof. If you are using a GOOD domestic ice cream maker, it should do all the work for you. If you are using an old fashion ice cream maker, keep an eye on it. It won’t take quite as long to churn, thanks to all the cream 😉 If you cant find “Coco Lopez” coconut cream, it’s no big deal. Just use whatever you can find. I have also used “Coco Re’al Cream of Coconut” and it was just as yummy. I was able to find this brand at the liquor store after my Coco Lopez went MIA at the grocery store. It is sold in a 22 oz. squeeze bottle, so just use about 1 1/4 c.
I hope you get a chance to make this! It’s perfect for summertime, because, even though it’s heavy, the coconut flavor is so refreshing! If you REALLY REALLY like coconut, pair it with a light coconut cake. That’s too much coconut for my husband, but I love it! If you want to cut the coconut flavor, pair it with a light lemon cake. I will try to get my lemon and coconut cakes posted (don’t you love how I tell you to make my recipes that I don’t have posted yet ;))

1 can coconut milk (13.5 fl. oz.)
½ can coconut cream (Coco Lopez 15 oz.)
1 c. heavy cream
1 c. whole milk
¼ c. coconut flakes (sweetened)
- In a large bowl, combine the coconut cream, coconut milk, heavy cream, and milk (I actually just pour all three directly into the ice cream maker, but it’s up to you). Stir to combine, and then pour the mixture into your ice cream maker. Follow manufacturers instructions for churning the ice cream.
- Once the ice cream is done, scoop it into a freezer container and freeze until ready to eat.
- To serve, sprinkle each scoop with coconut flakes. If you want to take it a step further, toast the coconut flakes either in a small skillet or in the oven. Then sprinkle each scoop with toasted coconut flakes… YUM 🙂
